Ingredients

  • 1 cup (30g) Fresh baby spinach
  • 1/2 medium (75g) Ripe avocado
  • 3/4 cup (175ml) Unsweetened coconut milk (beverage)
  • 6 leaves Fresh mint leaves
  • 1 tbsp (10g) Chia seeds
  • 2 tsp Lime juice
  • 1 tbsp Powdered allulose
  • pinch Pinch of salt
  • 1 cup Ice cubes

Method

  1. Add coconut milk, spinach, mint, avocado, chia, lime, allulose, and salt to the blender.
  2. Top with the ice cubes.
  3. Blend on high 60 seconds until the spinach is fully broken down and the color is vivid green with no flecks.
  4. Let it rest 1 minute so the chia hydrates and the smoothie thickens.
  5. Pour into a glass and drink straight away — the chia keeps thickening as it sits.
