Ingredients
- 2 cans (12 oz / 340g drained) Hearts of palm pasta (elbow shape)
- 3/4 cup Mayonnaise
- 1 tbsp Apple cider vinegar
- 2 tbsp (15g) Carrot, finely shredded
- 2 tbsp Sweet onion, minced
- 1 tsp Erythritol
- 2 tbsp Whole milk
- to taste Salt and white pepper
Method
- Drain and rinse the hearts of palm pasta well. Pat dry.
- Whisk mayo, vinegar, milk, erythritol, salt, and white pepper in a large bowl until smooth.
- Fold in pasta, carrot, and onion until evenly coated.
- Chill at least 1 hour before serving so the pasta soaks up the dressing.
