Ingredients

  • 2 cans (12 oz / 340g drained) Hearts of palm pasta (elbow shape)
  • 3/4 cup Mayonnaise
  • 1 tbsp Apple cider vinegar
  • 2 tbsp (15g) Carrot, finely shredded
  • 2 tbsp Sweet onion, minced
  • 1 tsp Erythritol
  • 2 tbsp Whole milk
  • to taste Salt and white pepper

Method

  1. Drain and rinse the hearts of palm pasta well. Pat dry.
  2. Whisk mayo, vinegar, milk, erythritol, salt, and white pepper in a large bowl until smooth.
  3. Fold in pasta, carrot, and onion until evenly coated.
  4. Chill at least 1 hour before serving so the pasta soaks up the dressing.
