Ingredients
- 4 All-beef hot dogs (no added sugar)
- 1 cup (96g) Almond flour
- 1 tbsp Psyllium husk powder
- 1 tsp Baking powder
- 1 large Egg
- 2 tbsp Greek yogurt, full-fat
- 1/4 tsp Salt
- 4 tsp Yellow mustard (no sugar)
- 4 tbsp Sugar-free ketchup
- 1/2 cup (70g) Sauerkraut, drained
- 8 slices Dill pickle slices
Method
- Preheat oven to 350°F (180°C). Whisk almond flour, psyllium husk, baking powder, and salt in a bowl.
- Stir in egg and Greek yogurt until a stiff dough forms; let rest 5 minutes for the psyllium to hydrate.
- Divide dough into 4 portions. Shape each into a 5-inch log on a parchment-lined baking sheet.
- Bake 15 minutes until golden and firm to the touch. Cool 5 minutes before slicing.
- Meanwhile, grill or pan-fry the hot dogs over medium-high heat 4-5 minutes, turning, until browned with crisp casing.
- Slice each bun lengthwise. Tuck in a hot dog and top with mustard, sugar-free ketchup, sauerkraut, and pickle slices.
