Ingredients

  • 4 All-beef hot dogs (no added sugar)
  • 1 cup (96g) Almond flour
  • 1 tbsp Psyllium husk powder
  • 1 tsp Baking powder
  • 1 large Egg
  • 2 tbsp Greek yogurt, full-fat
  • 1/4 tsp Salt
  • 4 tsp Yellow mustard (no sugar)
  • 4 tbsp Sugar-free ketchup
  • 1/2 cup (70g) Sauerkraut, drained
  • 8 slices Dill pickle slices

Method

  1. Preheat oven to 350°F (180°C). Whisk almond flour, psyllium husk, baking powder, and salt in a bowl.
  2. Stir in egg and Greek yogurt until a stiff dough forms; let rest 5 minutes for the psyllium to hydrate.
  3. Divide dough into 4 portions. Shape each into a 5-inch log on a parchment-lined baking sheet.
  4. Bake 15 minutes until golden and firm to the touch. Cool 5 minutes before slicing.
  5. Meanwhile, grill or pan-fry the hot dogs over medium-high heat 4-5 minutes, turning, until browned with crisp casing.
  6. Slice each bun lengthwise. Tuck in a hot dog and top with mustard, sugar-free ketchup, sauerkraut, and pickle slices.
