  • 1 cup (100g) Shredded cheddar cheese
  • 4 large Eggs
  • 1/4 cup Salsa verde
  • 1 medium Avocado, sliced
  • 2 tbsp Sour cream
  • 2 tbsp, chopped Fresh cilantro
  • to taste Salt and pepper

Method

  1. Make cheese tortillas: sprinkle cheddar in circles on a non-stick pan over medium heat.
  2. Cook until edges are crispy and cheese is melted, about 2-3 minutes. Set aside.
  3. Fry eggs sunny side up in the same pan.
  4. Place eggs on cheese tortillas, top with salsa, avocado, sour cream, and cilantro.
