Ingredients
- 1 large head (600g) Cauliflower, chopped
- 1 medium Onion, diced
- 1 small Carrots, diced
- 3 tbsp Butter
- 1 tsp Cumin
- 1 tsp Paprika
- 4 cups Chicken or vegetable broth
- 2 tbsp Lemon juice
- to taste Salt and pepper
Method
- Melt butter in a large pot. Sauté onion and carrot for 5 minutes.
- Add cauliflower and cook for 3 minutes.
- Add broth, cumin, and paprika. Bring to a boil, then simmer 20 minutes.
- Blend until smooth with an immersion blender.
- Stir in lemon juice. Season with salt and pepper.
- Serve with a drizzle of paprika butter and lemon wedges.
