Ingredients

  • 1 large head (600g) Cauliflower, chopped
  • 1 medium Onion, diced
  • 1 small Carrots, diced
  • 3 tbsp Butter
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 4 cups Chicken or vegetable broth
  • 2 tbsp Lemon juice
  • to taste Salt and pepper

Method

  1. Melt butter in a large pot. Sauté onion and carrot for 5 minutes.
  2. Add cauliflower and cook for 3 minutes.
  3. Add broth, cumin, and paprika. Bring to a boil, then simmer 20 minutes.
  4. Blend until smooth with an immersion blender.
  5. Stir in lemon juice. Season with salt and pepper.
  6. Serve with a drizzle of paprika butter and lemon wedges.
