Ingredients

  • 10 leaves Fresh mint leaves
  • 1 1/2 tsp Powdered allulose
  • 1 oz (30ml) Fresh lime juice
  • 1.5 oz (45ml) White rum
  • 4 oz (120ml) Club soda
  • 1 each Lime wheel and mint sprig for garnish
  • 1 cup Crushed ice

Method

  1. Add the mint leaves and allulose to the bottom of a tall glass. Muddle gently with the back of a spoon — bruise the mint to release oils but don't shred it or it turns bitter.
  2. Add the lime juice and rum.
  3. Fill the glass to the top with crushed ice.
  4. Top with the club soda and stir up from the bottom once to mix.
  5. Garnish with the lime wheel and mint sprig, slap-clapped between your palms to wake up the aroma.
