Ingredients
- 1 lb (450g) Shrimp or chicken, sliced
- 4 medium Zucchini, spiralized
- 2 large Eggs
- 1/4 cup Peanuts, crushed
- 2 tbsp Fish sauce
- 2 tbsp Lime juice
- 1 tbsp Erythritol
- 2 tbsp Sesame oil
- 1 cup Bean sprouts
- 3, sliced Green onions
- to taste Red pepper flakes
Method
- Cook protein in sesame oil until done. Push to side of pan.
- Scramble eggs in the same pan. Break into pieces.
- Add zucchini noodles, cook 2 minutes.
- Mix fish sauce, lime juice, and erythritol. Pour over.
- Toss with bean sprouts. Top with peanuts, green onions, and pepper flakes.
