Ingredients

  • 1 lb (450g) Shrimp or chicken, sliced
  • 4 medium Zucchini, spiralized
  • 2 large Eggs
  • 1/4 cup Peanuts, crushed
  • 2 tbsp Fish sauce
  • 2 tbsp Lime juice
  • 1 tbsp Erythritol
  • 2 tbsp Sesame oil
  • 1 cup Bean sprouts
  • 3, sliced Green onions
  • to taste Red pepper flakes

Method

  1. Cook protein in sesame oil until done. Push to side of pan.
  2. Scramble eggs in the same pan. Break into pieces.
  3. Add zucchini noodles, cook 2 minutes.
  4. Mix fish sauce, lime juice, and erythritol. Pour over.
  5. Toss with bean sprouts. Top with peanuts, green onions, and pepper flakes.
