Ingredients
- 2 cups Heavy cream
- 1/2 cup Almond milk, unsweetened
- 1/4 cup Erythritol
- 2 tsp Gelatin powder
- 2 tsp Vanilla extract
- 1/2 cup (for topping) Fresh berries
Method
- Sprinkle gelatin over almond milk. Let bloom 5 minutes.
- Heat cream and erythritol until simmering. Remove from heat.
- Stir in gelatin mixture and vanilla until dissolved.
- Pour into 6 ramekins. Chill at least 4 hours until set.
- Serve topped with fresh berries.
