Ingredients

  • 2 cups Heavy cream
  • 1/2 cup Almond milk, unsweetened
  • 1/4 cup Erythritol
  • 2 tsp Gelatin powder
  • 2 tsp Vanilla extract
  • 1/2 cup (for topping) Fresh berries

Method

  1. Sprinkle gelatin over almond milk. Let bloom 5 minutes.
  2. Heat cream and erythritol until simmering. Remove from heat.
  3. Stir in gelatin mixture and vanilla until dissolved.
  4. Pour into 6 ramekins. Chill at least 4 hours until set.
  5. Serve topped with fresh berries.
