Ingredients

  • 8 oz (225g) Sirloin steak, sliced thin
  • 2 cups Shredded Mexican blend cheese
  • 1/4 medium Onion, sliced thin
  • 1 Jalapeño, sliced
  • 1/2 tsp Cumin
  • 1/4 tsp Garlic powder
  • 1 tbsp Olive oil
  • for serving Sour cream

Method

  1. Season steak with cumin, garlic powder, salt and pepper. Sear in olive oil 2 minutes per side. Slice thin.
  2. In a non-stick pan over medium heat, sprinkle 1/2 cup cheese in a circle. Let it melt and crisp.
  3. When edges are golden, add steak, onion, and jalapeño on one half.
  4. Add more cheese on top. Fold the crispy cheese shell over. Cook 1 more minute.
  5. Repeat for second quesadilla. Serve with sour cream and guacamole.
