Ingredients
- 2 lbs (900g) Chicken thighs
- 3 tbsp Natural peanut butter
- 1/4 cup Coconut milk
- 2 tbsp Soy sauce
- 2 tbsp Lime juice
- 1 tsp Sriracha
- 2 cloves Garlic, minced
- 1 tsp Ginger, grated
- 2 tbsp Crushed peanuts
- for garnish Fresh cilantro
Method
- Season chicken with salt and pepper. Grill 6-7 minutes per side.
- Whisk peanut butter, coconut milk, soy sauce, lime, sriracha, garlic, and ginger.
- Warm sauce in a small pan 2-3 minutes.
- Drizzle over grilled chicken. Top with crushed peanuts and cilantro.
