Ingredients
- 1/2 cup (120ml) Heavy cream, very cold
- 1/2 cup (100g) Mascarpone, softened
- 2 tbsp Lemon juice
- 1 tbsp Lemon zest
- 1/4 cup Powdered monk fruit
Method
- Whip heavy cream to stiff peaks in a chilled bowl.
- In another bowl, beat mascarpone with lemon juice, zest, and monk fruit until smooth.
- Gently fold whipped cream into the mascarpone mixture in two additions.
- Spoon into 2 ramekins or glasses and chill at least 1 hour before serving.
