Ingredients

  • 1/2 cup (120ml) Heavy cream, very cold
  • 1/2 cup (100g) Mascarpone, softened
  • 2 tbsp Lemon juice
  • 1 tbsp Lemon zest
  • 1/4 cup Powdered monk fruit

Method

  1. Whip heavy cream to stiff peaks in a chilled bowl.
  2. In another bowl, beat mascarpone with lemon juice, zest, and monk fruit until smooth.
  3. Gently fold whipped cream into the mascarpone mixture in two additions.
  4. Spoon into 2 ramekins or glasses and chill at least 1 hour before serving.
