Ingredients

  • 12 oz (340g) Sushi-grade salmon, finely diced
  • 1 medium Roma tomato, finely diced
  • 1/4 cup (40g) Sweet onion, finely diced
  • 2 Green onion, thinly sliced
  • 1 tsp Hawaiian sea salt
  • 1 cup Ice cubes

Method

  1. Toss salmon with sea salt in a bowl; refrigerate 1 hour to lightly cure.
  2. Rinse the salmon under cold water and pat dry.
  3. Combine salmon, tomato, sweet onion, and green onion. Top with ice cubes for 5 minutes to chill, then drain off any liquid.
  4. Serve immediately, cold.
