Ingredients
- 12 oz (340g) Sushi-grade salmon, finely diced
- 1 medium Roma tomato, finely diced
- 1/4 cup (40g) Sweet onion, finely diced
- 2 Green onion, thinly sliced
- 1 tsp Hawaiian sea salt
- 1 cup Ice cubes
Method
- Toss salmon with sea salt in a bowl; refrigerate 1 hour to lightly cure.
- Rinse the salmon under cold water and pat dry.
- Combine salmon, tomato, sweet onion, and green onion. Top with ice cubes for 5 minutes to chill, then drain off any liquid.
- Serve immediately, cold.
