Ingredients
- 1 lb (450g) Ground beef (80/20)
- 2 cups (200g) Shredded cheddar (for shells)
- 1 tbsp Chili powder
- 1 tsp Ground cumin
- 1 tsp Smoked paprika
- 1 tsp Garlic powder
- 1 tsp Salt
- 1/4 cup Water
- 1/4 cup Sour cream
- 1/4 cup Salsa, no sugar added
- 2 tbsp Cilantro, chopped
- 4 Lime wedges
Method
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
- Make 8 cheese mounds (1/4 cup each) on the sheet. Bake 5-6 minutes until edges are golden.
- Cool 1 minute, then drape each over a wooden spoon balanced on a glass to form shells. Cool until crisp.
- Brown beef in a skillet. Add spices, salt, and water; simmer until thickened, 5 minutes.
- Fill each shell with beef, sour cream, salsa, and cilantro. Serve with lime.
