Ingredients

  • 1 lb (450g) Ground beef (80/20)
  • 2 cups (200g) Shredded cheddar (for shells)
  • 1 tbsp Chili powder
  • 1 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 1 tsp Garlic powder
  • 1 tsp Salt
  • 1/4 cup Water
  • 1/4 cup Sour cream
  • 1/4 cup Salsa, no sugar added
  • 2 tbsp Cilantro, chopped
  • 4 Lime wedges

Method

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
  2. Make 8 cheese mounds (1/4 cup each) on the sheet. Bake 5-6 minutes until edges are golden.
  3. Cool 1 minute, then drape each over a wooden spoon balanced on a glass to form shells. Cool until crisp.
  4. Brown beef in a skillet. Add spices, salt, and water; simmer until thickened, 5 minutes.
  5. Fill each shell with beef, sour cream, salsa, and cilantro. Serve with lime.
