Ingredients

  • 1.5 lbs (680g) Chicken thighs
  • 1 can (14 oz) Diced tomatoes
  • 4 cups Chicken broth
  • 2 Jalapeño, diced
  • 1 tbsp Cumin
  • 1 large Avocado, diced
  • 2 tbsp Lime juice
  • 1/4 cup Fresh cilantro
  • 1/4 cup Sour cream
  • to taste Salt

Method

  1. Simmer chicken in broth with tomatoes, jalapeños, and cumin for 20 minutes.
  2. Remove chicken, shred with forks, return to pot.
  3. Stir in lime juice. Season with salt.
  4. Serve topped with avocado, sour cream, and cilantro.
