Ingredients
- 1.5 lbs (680g) Chicken thighs
- 1 can (14 oz) Diced tomatoes
- 4 cups Chicken broth
- 2 Jalapeño, diced
- 1 tbsp Cumin
- 1 large Avocado, diced
- 2 tbsp Lime juice
- 1/4 cup Fresh cilantro
- 1/4 cup Sour cream
- to taste Salt
Method
- Simmer chicken in broth with tomatoes, jalapeños, and cumin for 20 minutes.
- Remove chicken, shred with forks, return to pot.
- Stir in lime juice. Season with salt.
- Serve topped with avocado, sour cream, and cilantro.
