Ingredients

  • 4 Large eggs, separated
  • 4 oz (113g) Cream cheese, softened
  • 1/4 tsp Cream of tartar
  • 1/4 tsp Salt

Method

  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment.
  2. Beat egg whites with cream of tartar to stiff peaks.
  3. In a separate bowl, beat egg yolks with cream cheese and salt until smooth.
  4. Gently fold the whites into the yolk mixture in three additions, keeping volume.
  5. Spoon into 8 rounds on the parchment, smoothing the tops.
  6. Bake 25 minutes until golden and set. Cool fully before slicing for sandwiches.
