- 1/3 cup (33g) Almond flour
- 1 Large egg
- 1/4 cup (28g) Mozzarella, shredded
- 1/2 tsp Baking powder
- 2 tbsp (32g) Sugar-free peanut butter
- 1 tsp Butter
- pinch Cinnamon (optional)
- pinch Salt
Method
- Combine almond flour, baking powder, salt, mozzarella, and egg into a smooth dough.
- Press into 2 thin rectangular slices on parchment; microwave 60-90 seconds until set, or bake at 375°F for 8 minutes. Let cool 1 minute.
- Spread sugar-free peanut butter generously over one slice; sprinkle with cinnamon if using.
- For a warm finish, toast both slices in butter over medium heat for 1-2 minutes per side until golden.
