Ingredients

  • 10 oz (285g) Cooked rotisserie chicken, shredded or cubed
  • 3 tbsp Basil pesto (no added sugar)
  • 1 cup (150g) Cherry tomatoes, halved
  • 4 oz (115g) Mini mozzarella pearls (ciliegine)
  • 1 tbsp Extra virgin olive oil
  • 1 tsp Balsamic vinegar
  • 1/4 cup Fresh basil leaves, torn
  • to taste Salt and black pepper

Method

  1. In a large bowl, toss chicken with pesto until evenly coated.
  2. Add cherry tomatoes and mozzarella pearls; gently fold to combine.
  3. Drizzle with olive oil and balsamic; season with salt and pepper.
  4. Top with torn basil. Serve cold or warm in a skillet over medium heat for 2-3 minutes.
