Ingredients
- 10 oz (285g) Cooked rotisserie chicken, shredded or cubed
- 3 tbsp Basil pesto (no added sugar)
- 1 cup (150g) Cherry tomatoes, halved
- 4 oz (115g) Mini mozzarella pearls (ciliegine)
- 1 tbsp Extra virgin olive oil
- 1 tsp Balsamic vinegar
- 1/4 cup Fresh basil leaves, torn
- to taste Salt and black pepper
Method
- In a large bowl, toss chicken with pesto until evenly coated.
- Add cherry tomatoes and mozzarella pearls; gently fold to combine.
- Drizzle with olive oil and balsamic; season with salt and pepper.
