  • 2 cups (300g) Cooked shredded chicken
  • 1/3 cup Basil pesto
  • 1/2 cup Cherry tomatoes, halved
  • 2 tbsp Pine nuts, toasted
  • 2 tbsp Parmesan, grated
  • 1 large English cucumber, sliced thick
  • to taste Salt and pepper

Method

  1. In a bowl, combine shredded chicken with pesto until well coated.
  2. Stir in halved cherry tomatoes, pine nuts, and parmesan.
