Ingredients

  • 8 oz (225g) Mexican chorizo (raw)
  • 8 oz (225g) Shredded Oaxaca or mozzarella
  • 4 oz (115g) Shredded Monterey jack
  • 1/2 Poblano pepper, diced
  • 2 tbsp White onion, finely diced
  • 1 tbsp Cilantro, chopped
  • 1 cup (30g) Pork rinds (to serve)

Method

  1. Preheat oven to 400°F (200°C).
  2. Brown chorizo in an oven-safe skillet, breaking it up. Add poblano and onion; cook 3 minutes.
  3. Drain off excess fat, leaving 1 tbsp. Spread chorizo evenly in the skillet.
  4. Top with both cheeses. Bake 8-10 minutes until bubbling and golden.
  5. Garnish with cilantro and serve hot with pork rinds for scooping.
