Ingredients
- 8 oz (225g) Mexican chorizo (raw)
- 8 oz (225g) Shredded Oaxaca or mozzarella
- 4 oz (115g) Shredded Monterey jack
- 1/2 Poblano pepper, diced
- 2 tbsp White onion, finely diced
- 1 tbsp Cilantro, chopped
- 1 cup (30g) Pork rinds (to serve)
Method
- Preheat oven to 400°F (200°C).
- Brown chorizo in an oven-safe skillet, breaking it up. Add poblano and onion; cook 3 minutes.
- Drain off excess fat, leaving 1 tbsp. Spread chorizo evenly in the skillet.
- Top with both cheeses. Bake 8-10 minutes until bubbling and golden.
- Garnish with cilantro and serve hot with pork rinds for scooping.
