Ingredients

  • 1/2 head (450g) Green cabbage, cut into 1-inch steaks
  • 3 tbsp Olive oil
  • 3 cloves Garlic, minced
  • 1 tsp Fresh thyme leaves
  • 1/4 cup (25g) Parmesan, grated
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Method

  1. Preheat oven to 400°F (200°C). Line a sheet pan with parchment.
  2. Brush both sides of each cabbage steak with olive oil.
  3. Scatter garlic and thyme over the tops. Season with salt and pepper.
  4. Roast 20 minutes, flip, and roast 10 more minutes until edges are deeply caramelized.
  5. Sprinkle with parmesan during the last 3 minutes to melt. Serve hot.
