Ingredients

  • 1 lb (450g) Breakfast sausage, ground
  • 4 large Eggs
  • 1 cup Mozzarella, shredded
  • 1/2 cup Cheddar, shredded
  • 1/4 cup Bell pepper, finely diced
  • 2 tbsp Green onion, sliced
  • 1 tsp Italian seasoning
  • to taste Salt and pepper

Method

  1. Preheat oven to 400°F (200°C).
  2. Press sausage into a 10-inch round on a parchment-lined baking sheet, about 1/4-inch thick.
  3. Bake 12-15 minutes until cooked through. Drain off excess grease.
  4. Sprinkle mozzarella over sausage crust. Make 4 small wells in the cheese.
  5. Crack an egg into each well. Sprinkle with cheddar, bell pepper, and seasoning.
  6. Return to oven 8-10 minutes until egg whites set but yolks are still runny.
  7. Garnish with green onion. Slice into wedges and serve.
