Ingredients
- 1 lb (450g) Breakfast sausage, ground
- 4 large Eggs
- 1 cup Mozzarella, shredded
- 1/2 cup Cheddar, shredded
- 1/4 cup Bell pepper, finely diced
- 2 tbsp Green onion, sliced
- 1 tsp Italian seasoning
- to taste Salt and pepper
Method
- Preheat oven to 400°F (200°C).
- Press sausage into a 10-inch round on a parchment-lined baking sheet, about 1/4-inch thick.
- Bake 12-15 minutes until cooked through. Drain off excess grease.
- Sprinkle mozzarella over sausage crust. Make 4 small wells in the cheese.
- Crack an egg into each well. Sprinkle with cheddar, bell pepper, and seasoning.
- Return to oven 8-10 minutes until egg whites set but yolks are still runny.
- Garnish with green onion. Slice into wedges and serve.
