Ingredients
- 2 (3 oz / 85g total) Breakfast sausage links
- 2 Large eggs
- 1 oz (28g) Sharp cheddar, shredded
- 1 tsp Butter
- to taste Salt and black pepper
Method
- Brown the sausage links in a nonstick skillet over medium heat, 6-8 minutes, turning to color all sides.
- Transfer sausages to a plate. Wipe the skillet, then add butter.
- Whisk eggs with a pinch of salt. Pour into the pan and stir gently over medium-low heat.
- When the curds are still glossy, fold in the cheddar and pull the eggs off heat.
- Plate eggs alongside the sausages. Season with pepper and serve.
