Ingredients

  • 2 (3 oz / 85g total) Breakfast sausage links
  • 2 Large eggs
  • 1 oz (28g) Sharp cheddar, shredded
  • 1 tsp Butter
  • to taste Salt and black pepper

Method

  1. Brown the sausage links in a nonstick skillet over medium heat, 6-8 minutes, turning to color all sides.
  2. Transfer sausages to a plate. Wipe the skillet, then add butter.
  3. Whisk eggs with a pinch of salt. Pour into the pan and stir gently over medium-low heat.
  4. When the curds are still glossy, fold in the cheddar and pull the eggs off heat.
  5. Plate eggs alongside the sausages. Season with pepper and serve.
