Ingredients
- 1 lb (450g) Smoked beef sausage
- 2 medium Bell peppers (mixed), 1-inch chunks
- 1/2 medium Red onion, 1-inch chunks
- 2 tbsp Olive oil
- 1 tsp Smoked paprika
- 1 tsp Garlic powder
- to taste Salt and pepper
- 1/4 cup Sugar-free BBQ sauce
Method
- Soak wooden skewers 30 minutes (or use metal). Slice sausage into 1-inch rounds.
- Toss sausage and vegetables with oil, paprika, garlic powder, salt, and pepper.
- Thread onto skewers, alternating sausage, peppers, and onion.
- Smoke at 250°F (120°C) for 45 minutes. Brush with BBQ sauce; smoke another 10-15 minutes.
- Serve hot off the smoker.
