Ingredients

  • 1 lb (450g) Smoked beef sausage
  • 2 medium Bell peppers (mixed), 1-inch chunks
  • 1/2 medium Red onion, 1-inch chunks
  • 2 tbsp Olive oil
  • 1 tsp Smoked paprika
  • 1 tsp Garlic powder
  • to taste Salt and pepper
  • 1/4 cup Sugar-free BBQ sauce

Method

  1. Soak wooden skewers 30 minutes (or use metal). Slice sausage into 1-inch rounds.
  2. Toss sausage and vegetables with oil, paprika, garlic powder, salt, and pepper.
  3. Thread onto skewers, alternating sausage, peppers, and onion.
  4. Smoke at 250°F (120°C) for 45 minutes. Brush with BBQ sauce; smoke another 10-15 minutes.
  5. Serve hot off the smoker.
