Ingredients
- 8 lbs (3.6kg) Pork shoulder (bone-in)
- 3 tbsp Erythritol brown sugar substitute
- 2 tbsp Smoked paprika
- 2 tbsp Salt
- 1 tbsp Black pepper
- 1 tbsp Garlic powder
- 1 tbsp Onion powder
- 1 tsp Ground cumin
- 1/2 tsp Cayenne
- 2 tbsp Yellow mustard (binder)
Method
- Mix all dry rub ingredients in a bowl.
- Slather pork with mustard, then coat heavily with the rub. Refrigerate uncovered 4+ hours, ideally overnight.
- Preheat smoker to 225°F (107°C). Smoke pork fat-side up until internal 165°F, about 6-8 hours.
- Wrap tightly in foil or butcher paper. Continue smoking until internal 203°F (probe slides in like butter), another 4-6 hours.
- Rest wrapped in a cooler for 1 hour. Pull apart by hand, mixing the bark through.
