Ingredients
- 12 oz (340g) Cooked chicken, shredded
- 6 cups Chicken broth
- 1 tbsp Olive oil
- 1/2 cup White onion, diced
- 3 cloves Garlic, minced
- 1 Roma tomato, diced
- 1 Jalapeño, seeded and sliced
- 1/3 cup Lime juice
- 1 tsp Lime zest
- 1 tsp Dried oregano
- 1/2 Avocado, diced
- 1 cup (30g) Pork rinds, crushed
- 2 tbsp Cilantro, chopped
Method
- Heat oil in a soup pot. Sauté onion, garlic, and jalapeño 4 minutes.
- Add tomato and oregano; cook 2 minutes.
- Pour in broth; bring to a simmer and add shredded chicken. Cook 10 minutes.
- Stir in lime juice and zest. Taste and adjust salt.
- Ladle into bowls. Top each with avocado, crushed pork rinds, and cilantro. Serve with extra lime wedges.
