Ingredients

  • 12 oz (340g) Cooked chicken, shredded
  • 6 cups Chicken broth
  • 1 tbsp Olive oil
  • 1/2 cup White onion, diced
  • 3 cloves Garlic, minced
  • 1 Roma tomato, diced
  • 1 Jalapeño, seeded and sliced
  • 1/3 cup Lime juice
  • 1 tsp Lime zest
  • 1 tsp Dried oregano
  • 1/2 Avocado, diced
  • 1 cup (30g) Pork rinds, crushed
  • 2 tbsp Cilantro, chopped

Method

  1. Heat oil in a soup pot. Sauté onion, garlic, and jalapeño 4 minutes.
  2. Add tomato and oregano; cook 2 minutes.
  3. Pour in broth; bring to a simmer and add shredded chicken. Cook 10 minutes.
  4. Stir in lime juice and zest. Taste and adjust salt.
  5. Ladle into bowls. Top each with avocado, crushed pork rinds, and cilantro. Serve with extra lime wedges.
