Ingredients
- 3 large Eggs
- 1 cup Fresh spinach
- 1 small Jalapeño, sliced
- 2 tbsp, chopped Fresh cilantro
- 2 tbsp Feta cheese, crumbled
- 1 tbsp Butter
- to taste Salt and pepper
Method
- Whisk eggs with salt and pepper.
- Melt butter in a non-stick pan over medium heat.
- Add spinach and jalapeño, sauté 1 minute until spinach wilts.
- Pour in eggs. Cook until edges set, then fold.
- Top with feta and cilantro. Serve immediately.
