Ingredients

  • 3 large Eggs
  • 1 cup Fresh spinach
  • 1 small Jalapeño, sliced
  • 2 tbsp, chopped Fresh cilantro
  • 2 tbsp Feta cheese, crumbled
  • 1 tbsp Butter
  • to taste Salt and pepper

Method

  1. Whisk eggs with salt and pepper.
  2. Melt butter in a non-stick pan over medium heat.
  3. Add spinach and jalapeño, sauté 1 minute until spinach wilts.
  4. Pour in eggs. Cook until edges set, then fold.
  5. Top with feta and cilantro. Serve immediately.
