Ingredients

  • 3 Large eggs
  • 1 cup (30g) Baby spinach
  • 1/3 cup (40g) Shredded cheddar or gruyère
  • 1 tbsp Butter
  • to taste Salt and black pepper

Method

  1. Whisk eggs with a pinch of salt and pepper until uniform.
  2. Melt butter in an 8-inch nonstick skillet over medium heat. Add spinach; cook 30 seconds until just wilted.
  3. Pour in eggs; tilt pan to coat. Let set 60-90 seconds, lifting edges to let raw egg flow underneath.
  4. Scatter cheese over one half. Fold the other half over and slide onto a plate.
