- 3 Large eggs
- 1 cup (30g) Baby spinach
- 1/3 cup (40g) Shredded cheddar or gruyère
- 1 tbsp Butter
- to taste Salt and black pepper
Method
- Whisk eggs with a pinch of salt and pepper until uniform.
- Melt butter in an 8-inch nonstick skillet over medium heat. Add spinach; cook 30 seconds until just wilted.
- Pour in eggs; tilt pan to coat. Let set 60-90 seconds, lifting edges to let raw egg flow underneath.
- Scatter cheese over one half. Fold the other half over and slide onto a plate.
