Ingredients
- 1 large Keto wrap (low-carb tortilla)
- 4 oz (115g) Ribeye steak
- 1/4 cup Yellow onion, thinly sliced
- 1 tbsp Butter
- 2 tbsp (15g) Bleu cheese crumbles
- 1/2 cup Arugula
- 1 tsp Mayonnaise
- 1/2 tsp Dijon mustard
- to taste Salt and black pepper
Method
- Melt 1/2 tbsp butter over medium. Caramelize onion 8-10 minutes until deeply golden; set aside.
- Season ribeye generously. Sear in remaining butter over high heat 2-3 minutes per side. Rest 3 minutes, then slice thin.
- Mix mayo and dijon. Spread on the wrap.
- Layer steak, caramelized onion, bleu cheese, and arugula.
- Roll up tightly and slice on the bias.
