Ingredients

  • 1 large Keto wrap (low-carb tortilla)
  • 4 oz (115g) Ribeye steak
  • 1/4 cup Yellow onion, thinly sliced
  • 1 tbsp Butter
  • 2 tbsp (15g) Bleu cheese crumbles
  • 1/2 cup Arugula
  • 1 tsp Mayonnaise
  • 1/2 tsp Dijon mustard
  • to taste Salt and black pepper

Method

  1. Melt 1/2 tbsp butter over medium. Caramelize onion 8-10 minutes until deeply golden; set aside.
  2. Season ribeye generously. Sear in remaining butter over high heat 2-3 minutes per side. Rest 3 minutes, then slice thin.
  3. Mix mayo and dijon. Spread on the wrap.
  4. Layer steak, caramelized onion, bleu cheese, and arugula.
  5. Roll up tightly and slice on the bias.
