Ingredients

  • 4 large Bell peppers
  • 1 lb (450g) Ground beef
  • 1 cup Cauliflower rice
  • 1/2 can (7 oz) Diced tomatoes
  • 1 cup (100g) Shredded cheddar
  • 1 tbsp Italian seasoning
  • 2 cloves Garlic, minced
  • to taste Salt and pepper

Method

  1. Cut tops off peppers, remove seeds.
  2. Brown beef with garlic and Italian seasoning.
  3. Mix in cauliflower rice, tomatoes, and half the cheddar.
  4. Stuff peppers with the mixture.
  5. Bake at 375°F (190°C) for 25-30 minutes. Top with remaining cheddar, bake 5 more minutes.
