Ingredients
- 4 large Bell peppers
- 1 lb (450g) Ground beef
- 1 cup Cauliflower rice
- 1/2 can (7 oz) Diced tomatoes
- 1 cup (100g) Shredded cheddar
- 1 tbsp Italian seasoning
- 2 cloves Garlic, minced
- to taste Salt and pepper
Method
- Cut tops off peppers, remove seeds.
- Brown beef with garlic and Italian seasoning.
- Mix in cauliflower rice, tomatoes, and half the cheddar.
- Stuff peppers with the mixture.
- Bake at 375°F (190°C) for 25-30 minutes. Top with remaining cheddar, bake 5 more minutes.
