Ingredients
- 2 racks (~4 lbs / 1.8kg) Baby back ribs
- 3 tbsp Erythritol brown sugar substitute
- 1 tbsp Smoked paprika
- 2 tsp Garlic powder
- 2 tsp Onion powder
- 1 tbsp Salt
- 1 tbsp Black pepper
- 1/2 cup Sugar-free BBQ sauce (e.g., G Hughes)
- 4 tbsp Butter, sliced
Method
- Remove the silver skin from the back of each rack.
- Mix erythritol brown sugar, paprika, garlic powder, onion powder, salt, and pepper. Rub all over ribs.
- Smoke at 225°F (107°C) for 3 hours.
- Place each rack on a sheet of foil. Top with sliced butter. Wrap tightly and return to smoker for 2 hours.
- Unwrap, brush with BBQ sauce, and smoke uncovered 1 more hour to set the glaze.
- Rest 10 minutes, then slice between the bones.
