Ingredients

  • 2 racks (~4 lbs / 1.8kg) Baby back ribs
  • 3 tbsp Erythritol brown sugar substitute
  • 1 tbsp Smoked paprika
  • 2 tsp Garlic powder
  • 2 tsp Onion powder
  • 1 tbsp Salt
  • 1 tbsp Black pepper
  • 1/2 cup Sugar-free BBQ sauce (e.g., G Hughes)
  • 4 tbsp Butter, sliced

Method

  1. Remove the silver skin from the back of each rack.
  2. Mix erythritol brown sugar, paprika, garlic powder, onion powder, salt, and pepper. Rub all over ribs.
  3. Smoke at 225°F (107°C) for 3 hours.
  4. Place each rack on a sheet of foil. Top with sliced butter. Wrap tightly and return to smoker for 2 hours.
  5. Unwrap, brush with BBQ sauce, and smoke uncovered 1 more hour to set the glaze.
  6. Rest 10 minutes, then slice between the bones.
