Ingredients

  • 1 lb (450g) Chicken thighs, sliced
  • 1 can (400ml) Coconut milk (full fat)
  • 1 cup Chicken broth
  • 1 cup Mushrooms, sliced
  • 2 stalks Lemongrass, smashed
  • 1 inch piece Galangal or ginger, sliced
  • 2 tbsp Fish sauce
  • 2 tbsp Lime juice
  • 2-3 Thai chilies
  • for garnish Fresh cilantro

Method

  1. Bring broth, coconut milk, lemongrass, and galangal to a simmer.
  2. Add chicken and mushrooms. Cook 10-12 minutes.
  3. Stir in fish sauce, lime juice, and chilies.
  4. Remove lemongrass and galangal. Garnish with cilantro.
