Ingredients
- 1 lb (450g) Chicken thighs, sliced
- 1 can (400ml) Coconut milk (full fat)
- 1 cup Chicken broth
- 1 cup Mushrooms, sliced
- 2 stalks Lemongrass, smashed
- 1 inch piece Galangal or ginger, sliced
- 2 tbsp Fish sauce
- 2 tbsp Lime juice
- 2-3 Thai chilies
- for garnish Fresh cilantro
Method
- Bring broth, coconut milk, lemongrass, and galangal to a simmer.
- Add chicken and mushrooms. Cook 10-12 minutes.
- Stir in fish sauce, lime juice, and chilies.
- Remove lemongrass and galangal. Garnish with cilantro.
