Ingredients
- 1 bunch (~340g) Asparagus, trimmed and cut into 2-inch pieces
- 2 tbsp Butter
- 1 can (5 oz / 140g) Canned tuna in water, drained
- 1/4 cup (60ml) Heavy cream
- 2 tbsp Grated parmesan
- 2 tsp Lemon juice
- 2 cloves Garlic, minced
- 1/2 tsp Cracked black pepper
- 1 tbsp Fresh chives, sliced
- to taste Salt
Method
- Melt butter in a large skillet over medium-high heat.
- Add asparagus; sauté 4-5 minutes until snap-tender and lightly charred.
- Reduce heat to medium. Add garlic; cook 30 seconds until fragrant.
- Stir in flaked tuna and heavy cream; simmer 2 minutes until the sauce thickens slightly.
- Off the heat, stir in parmesan and lemon juice. Season with salt and plenty of cracked black pepper.
- Plate and finish with chives.
