Ingredients

  • 1 bunch (~340g) Asparagus, trimmed and cut into 2-inch pieces
  • 2 tbsp Butter
  • 1 can (5 oz / 140g) Canned tuna in water, drained
  • 1/4 cup (60ml) Heavy cream
  • 2 tbsp Grated parmesan
  • 2 tsp Lemon juice
  • 2 cloves Garlic, minced
  • 1/2 tsp Cracked black pepper
  • 1 tbsp Fresh chives, sliced
  • to taste Salt

Method

  1. Melt butter in a large skillet over medium-high heat.
  2. Add asparagus; sauté 4-5 minutes until snap-tender and lightly charred.
  3. Reduce heat to medium. Add garlic; cook 30 seconds until fragrant.
  4. Stir in flaked tuna and heavy cream; simmer 2 minutes until the sauce thickens slightly.
  5. Off the heat, stir in parmesan and lemon juice. Season with salt and plenty of cracked black pepper.
  6. Plate and finish with chives.
