Ingredients

  • 8 Large eggs
  • 1 can (5 oz / 140g) Canned tuna in water, drained
  • 2 cups (60g) Baby spinach, chopped
  • 1/2 cup (55g) Shredded cheddar
  • 2 tbsp Heavy cream
  • 1 tsp Dijon mustard
  • 1/2 tsp Garlic powder
  • as needed Olive oil spray (for the tin)
  • to taste Salt and black pepper

Method

  1. Preheat oven to 350°F (175°C). Spray a 12-cup silicone or nonstick muffin tin with olive oil.
  2. Whisk eggs with heavy cream, Dijon, garlic powder, salt, and pepper.
  3. Stir in flaked tuna, chopped spinach, and shredded cheddar.
  4. Divide the mixture among 12 muffin cups, filling about 3/4 full.
  5. Bake 16-18 minutes until set in the center and lightly golden.
  6. Cool 5 minutes before unmolding. Refrigerate up to 4 days; reheat 30 seconds.
