Ingredients
- 8 Large eggs
- 1 can (5 oz / 140g) Canned tuna in water, drained
- 2 cups (60g) Baby spinach, chopped
- 1/2 cup (55g) Shredded cheddar
- 2 tbsp Heavy cream
- 1 tsp Dijon mustard
- 1/2 tsp Garlic powder
- as needed Olive oil spray (for the tin)
- to taste Salt and black pepper
Method
- Preheat oven to 350°F (175°C). Spray a 12-cup silicone or nonstick muffin tin with olive oil.
- Whisk eggs with heavy cream, Dijon, garlic powder, salt, and pepper.
- Stir in flaked tuna, chopped spinach, and shredded cheddar.
- Divide the mixture among 12 muffin cups, filling about 3/4 full.
- Bake 16-18 minutes until set in the center and lightly golden.
- Cool 5 minutes before unmolding. Refrigerate up to 4 days; reheat 30 seconds.
