  • 2 cans (5 oz / 140g each) Canned tuna in olive oil, drained
  • 2 tbsp Extra virgin olive oil
  • 3 tbsp Sun-dried tomatoes in oil, chopped
  • 1 tbsp Capers, drained
  • 1 tsp Lemon zest
  • 2 tsp Lemon juice
  • 2 tbsp Fresh parsley, chopped
  • 1/4 tsp Red pepper flakes
  • 1/2 clove Garlic, finely grated
  • to taste Salt and black pepper

Method

  1. Flake tuna into a mixing bowl, leaving some larger chunks for texture.
  2. Add olive oil, lemon zest, lemon juice, and grated garlic; fold gently.
  3. Stir in sun-dried tomatoes, capers, parsley, and red pepper flakes.
  4. Season with salt and pepper; let rest 5 minutes for flavors to meld.
  5. Serve over greens, cucumber rounds, or romaine leaves.
