Ingredients

  • 3 tbsp Chia seeds
  • 1/2 cup Unsweetened almond milk
  • 1/4 cup Heavy cream
  • 1 tsp Vanilla extract
  • 2 tbsp Mixed berries
  • 1 tbsp Slivered almonds
  • to taste Stevia or erythritol

Method

  1. Whisk chia, almond milk, heavy cream, vanilla, and sweetener in a jar or bowl until fully combined with no clumps.
  2. Cover and refrigerate at least 4 hours, ideally overnight. Stir once after 30 minutes if you remember.
  3. When ready to eat, stir the pudding to loosen. Top with berries and slivered almonds.
