Ingredients

  • 300 g beef
  • 1 tsp madras curry
  • 2 medium tomato
  • 300 g coconut milk
  • 3 cloves garlic

Method

  1. Mince the garlic cloves and cube the beef into bite-sized pieces, then dice the tomatoes and set all ingredients aside before beginning.
  2. Heat a heavy-bottomed pan over medium-high heat and sear the beef cubes for 3-4 minutes until browned on all sides, developing a deep crust.
  3. Add the minced garlic to the pan and temper it with the madras curry powder, stirring constantly for 1-2 minutes to bloom the spice in the residual fat.
  4. Stir in the diced tomatoes and cook for 5 minutes over medium heat, pressing them down to break them into a rough sauce base.
  5. Pour in the coconut milk, stir to combine with the tomato and spice mixture, then bring the curry to a gentle simmer.
  6. Reduce the heat to low and simmer uncovered for approximately 25 minutes, stirring occasionally, until the beef is tender and the sauce has thickened to a rich, cohesive consistency.
  7. Taste and adjust the madras curry seasoning if needed, then serve the Beef Madras hot directly from the pan.
