Ingredients

  • 150 g chicken
  • 60 g yogurt
  • 2 pieces pepper
  • 1 tsp curry leaves
  • 3 cloves garlic
  • 1 tsp ginger

Method

  1. Combine yogurt, crushed garlic, ginger, and pepper in a bowl, then add the chicken pieces and marinate for at least 12 minutes to allow the flavors to penetrate the meat.
  2. Heat oil in a deep pan or wok over high heat until it reaches approximately 180°C (350°F) for deep frying.
  3. Carefully lower the marinated chicken pieces into the hot oil and fry for about 2 minutes, turning once, until the chicken is golden brown and cooked through.
  4. In a separate small pan, temper the curry leaves in a little hot oil for 20-30 seconds until they turn crisp and aromatic.
  5. Toss the fried chicken with the tempered curry leaves immediately before serving to coat the pieces with the smoky, fragrant oil.
