Ingredients

  • 300 g chicken
  • 2 pieces pepper
  • 1 small onion
  • 2 medium tomato
  • 1 tsp ginger
  • 1 tsp garam masala

Method

  1. Cut the chicken into bite-sized pieces and slice the pepper into thin strips, then set both aside while you prepare the remaining ingredients.
  2. Heat oil in a heavy-bottomed pan or wok over medium-high heat and add the ginger, letting it sizzle for about 1 minute until fragrant.
  3. Add the chicken pieces to the pan and stir-fry over high heat for 8 to 10 minutes, turning frequently until the chicken is sealed and lightly browned on all sides.
  4. Add the sliced pepper and diced tomato to the pan, stirring well to combine all the ingredients with the chicken.
  5. Sprinkle in the garam masala and stir vigorously to coat everything evenly in the spice blend.
  6. Reduce the heat to medium and cook uncovered for a further 18 to 20 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened around the pepper and tomato.
  7. Taste and adjust seasoning before serving the jalfrezi hot, divided equally between two plates.
