Ingredients
- 300 g chicken
- 2 pieces pepper
- 1 small onion
- 2 medium tomato
- 1 tsp ginger
- 1 tsp garam masala
Method
- Cut the chicken into bite-sized pieces and slice the pepper into thin strips, then set both aside while you prepare the remaining ingredients.
- Heat oil in a heavy-bottomed pan or wok over medium-high heat and add the ginger, letting it sizzle for about 1 minute until fragrant.
- Add the chicken pieces to the pan and stir-fry over high heat for 8 to 10 minutes, turning frequently until the chicken is sealed and lightly browned on all sides.
- Add the sliced pepper and diced tomato to the pan, stirring well to combine all the ingredients with the chicken.
- Sprinkle in the garam masala and stir vigorously to coat everything evenly in the spice blend.
- Reduce the heat to medium and cook uncovered for a further 18 to 20 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened around the pepper and tomato.
- Taste and adjust seasoning before serving the jalfrezi hot, divided equally between two plates.
