Ingredients
- 300 g chicken
- 1 small plenty of onion
- 2 medium tomato
- 1 tsp ginger
- 1 tsp garam masala
Method
- Heat a heavy-bottomed pan over medium-high heat and add the chicken, searing it for 4-5 minutes until golden brown on all sides.
- Add the plenty of onion to the pan and cook for 8-10 minutes, stirring frequently, until deeply caramelized and golden.
- Stir in the ginger and garam masala, tempering the spices into the chicken and onion mixture for 1-2 minutes until fragrant.
- Add the tomatoes to the pan, crushing them gently, and stir to combine all ingredients into a rich, thick masala base.
- Reduce the heat to low, cover the pan, and simmer the dopiaza for 25-30 minutes until the chicken is cooked through and the sauce has thickened.
- Uncover the pan and cook for a final 3-5 minutes over medium heat, stirring to reduce the sauce to a dense, clinging consistency around the chicken.
