Ingredients

  • 300 g chicken
  • 30 g cashews
  • 100 ml heavy cream
  • 60 g yogurt
  • 1 tsp cardamom
  • 1 pinch saffron
  • 1 small onion

Method

  1. Soak the saffron in 2 tablespoons of warm water and set aside to bloom while you prepare the remaining ingredients.
  2. Blend the cashews with the yogurt into a smooth paste and stir in the cardamom to form the korma base.
  3. Heat a heavy-bottomed pan over medium heat, add the chicken, and sear for 4-5 minutes until lightly golden on all sides.
  4. Add the cashew-yogurt paste and the saffron water to the pan, stirring to coat the chicken evenly in the korma masala.
  5. Lower the heat and pour in the heavy cream, tempering it gently into the sauce to prevent splitting.
  6. Cover and simmer on low heat for 15-18 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened to a rich, velvety consistency.
