Ingredients
- 300 g chicken
- 30 g cashews
- 100 ml heavy cream
- 60 g yogurt
- 1 tsp cardamom
- 1 pinch saffron
- 1 small onion
Method
- Soak the saffron in 2 tablespoons of warm water and set aside to bloom while you prepare the remaining ingredients.
- Blend the cashews with the yogurt into a smooth paste and stir in the cardamom to form the korma base.
- Heat a heavy-bottomed pan over medium heat, add the chicken, and sear for 4-5 minutes until lightly golden on all sides.
- Add the cashew-yogurt paste and the saffron water to the pan, stirring to coat the chicken evenly in the korma masala.
- Lower the heat and pour in the heavy cream, tempering it gently into the sauce to prevent splitting.
- Cover and simmer on low heat for 15-18 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened to a rich, velvety consistency.
