Ingredients

  • 300 g chicken
  • 2 medium tomato
  • 2 pieces pepper
  • 50 g olives
  • 3 cloves garlic
  • 2 pieces rosemary

Method

  1. Heat a wide skillet over medium-high heat and sear the chicken for about 4 minutes per side until golden brown, then set aside.
  2. Add the garlic and rosemary to the same skillet and cook for 1 minute until fragrant.
  3. Stir in the chopped tomatoes and sliced pepper, cooking for 5 minutes until the vegetables begin to soften and release their juices.
  4. Return the chicken to the skillet, nestle it into the tomato and pepper mixture, and scatter the olives over the top.
  5. Reduce the heat to medium-low, cover, and simmer for 10 minutes until the chicken is cooked through and the sauce has thickened.
  6. Remove the rosemary sprigs, adjust seasoning, and let the cacciatore rest for 2 minutes before serving.
