Ingredients
- 300 g chicken
- 2 medium tomato
- 2 pieces pepper
- 50 g olives
- 3 cloves garlic
- 2 pieces rosemary
Method
- Heat a wide skillet over medium-high heat and sear the chicken for about 4 minutes per side until golden brown, then set aside.
- Add the garlic and rosemary to the same skillet and cook for 1 minute until fragrant.
- Stir in the chopped tomatoes and sliced pepper, cooking for 5 minutes until the vegetables begin to soften and release their juices.
- Return the chicken to the skillet, nestle it into the tomato and pepper mixture, and scatter the olives over the top.
- Reduce the heat to medium-low, cover, and simmer for 10 minutes until the chicken is cooked through and the sauce has thickened.
- Remove the rosemary sprigs, adjust seasoning, and let the cacciatore rest for 2 minutes before serving.
