Ingredients

  • 200 g mussels
  • 200 g zucchini noodles
  • 3 cloves garlic
  • 2 tbsp white wine
  • 1 tbsp parsley
  • 2 pieces pepper flakes

Method

  1. Heat a large skillet over medium-high heat and add the garlic cloves and pepper flakes, allowing them to sizzle and infuse the pan for about 2 minutes.
  2. Add the mussels to the skillet and pour in the white wine, then cover and steam for approximately 5 minutes until all the mussels have opened.
  3. Discard any mussels that have not opened, then remove the mussels from the pan and set aside, reserving the cooking liquid in the skillet.
  4. Add the zucchini noodles to the skillet with the reserved liquid and toss over medium heat for 3 to 4 minutes until just tender but still firm.
  5. Return the mussels to the skillet and toss everything together over medium heat for 1 to 2 minutes until heated through and well combined.
  6. Divide the zucchini noodles and mussels between two bowls and finish with a scattering of fresh parsley before serving immediately.
