Ingredients
- 200 g mussels
- 200 g zucchini noodles
- 3 cloves garlic
- 2 tbsp white wine
- 1 tbsp parsley
- 2 pieces pepper flakes
Method
- Heat a large skillet over medium-high heat and add the garlic cloves and pepper flakes, allowing them to sizzle and infuse the pan for about 2 minutes.
- Add the mussels to the skillet and pour in the white wine, then cover and steam for approximately 5 minutes until all the mussels have opened.
- Discard any mussels that have not opened, then remove the mussels from the pan and set aside, reserving the cooking liquid in the skillet.
- Add the zucchini noodles to the skillet with the reserved liquid and toss over medium heat for 3 to 4 minutes until just tender but still firm.
- Return the mussels to the skillet and toss everything together over medium heat for 1 to 2 minutes until heated through and well combined.
- Divide the zucchini noodles and mussels between two bowls and finish with a scattering of fresh parsley before serving immediately.
