Ingredients

  • 150 g chicken wings
  • 60 g yogurt
  • 1 tsp curry
  • 3 cloves garlic
  • 1 tsp ginger
  • 1 (juiced) lemon

Method

  1. In a bowl, combine yogurt, curry, garlic, ginger, and lemon juice to create a marinade, whisking until smooth and fully incorporated.
  2. Add the chicken wings to the marinade, turning to coat each piece thoroughly, then cover and refrigerate for at least 10 minutes of the prep time to allow the spices to penetrate the meat.
  3. Preheat a grill pan or skillet over high heat until it reaches a very high temperature, suitable for achieving a charred, tandoor-inspired finish on the wings.
  4. Place the marinated chicken wings onto the hot pan and cook for 4 minutes on the first side without moving them, allowing a deep, caramelized crust to form.
  5. Flip the wings and cook for a further 4 minutes on the second side until the yogurt-based coating is slightly charred at the edges and the wings are cooked through with no pink remaining.
  6. Rest the wings for 2 minutes before serving to allow the juices to redistribute throughout the meat.
