Ingredients

  • 300 g lamb
  • 300 g cauliflower rice
  • 1 pinch saffron
  • 60 g yogurt
  • 1 tsp spices

Method

  1. Marinate the lamb pieces in yogurt and spices for 10 minutes, ensuring the meat is thoroughly coated for maximum flavor absorption.
  2. Heat a heavy-bottomed pot over high heat and sear the marinated lamb for approximately 5 minutes until browned on all sides, locking in the juices.
  3. Reduce the heat to medium, cover the pot, and cook the lamb in its own juices and yogurt marinade for 20 minutes until tender.
  4. While the lamb cooks, steep the saffron in 2 tablespoons of warm water for 5 minutes to bloom its color and aroma.
  5. Add the cauliflower rice to the pot with the lamb, drizzle the saffron water over the top, and gently fold everything together without breaking the cauliflower rice.
  6. Cover the pot tightly and allow the biryani to steam on low heat for 8 minutes until the cauliflower rice is fully cooked and infused with the saffron and spices.
  7. Remove from heat and let the biryani rest covered for 5 minutes before serving to allow the flavors to meld together.
