Ingredients

  • 300 g lamb meatballs
  • 2 medium tomato sauce
  • 100 ml heavy cream
  • 1 tsp garam masala
  • 3 cloves garlic
  • 1 small onion

Method

  1. Heat a large skillet or deep pan over medium-high heat and sear the lamb meatballs for 4 to 5 minutes, turning occasionally, until browned on all sides.
  2. Reduce the heat to medium and add the garlic and onion to the pan, cooking for 3 to 4 minutes until softened and fragrant.
  3. Stir in the garam masala and cook for 1 minute, allowing the spice to bloom and coat the meatballs in the pan.
  4. Pour in the tomato sauce, stir to combine, and bring the curry to a gentle simmer over medium-low heat.
  5. Cover and cook for 20 to 22 minutes, stirring occasionally, until the lamb meatballs are cooked through and the sauce has thickened.
  6. Stir in the heavy cream and simmer uncovered for a final 4 to 5 minutes until the sauce is rich and creamy.
  7. Serve hot, dividing the kofta curry evenly between 2 bowls.
