Ingredients
- 300 g lamb meatballs
- 2 medium tomato sauce
- 100 ml heavy cream
- 1 tsp garam masala
- 3 cloves garlic
- 1 small onion
Method
- Heat a large skillet or deep pan over medium-high heat and sear the lamb meatballs for 4 to 5 minutes, turning occasionally, until browned on all sides.
- Reduce the heat to medium and add the garlic and onion to the pan, cooking for 3 to 4 minutes until softened and fragrant.
- Stir in the garam masala and cook for 1 minute, allowing the spice to bloom and coat the meatballs in the pan.
- Pour in the tomato sauce, stir to combine, and bring the curry to a gentle simmer over medium-low heat.
- Cover and cook for 20 to 22 minutes, stirring occasionally, until the lamb meatballs are cooked through and the sauce has thickened.
- Stir in the heavy cream and simmer uncovered for a final 4 to 5 minutes until the sauce is rich and creamy.
- Serve hot, dividing the kofta curry evenly between 2 bowls.
