Ingredients

  • 100 g swordfish
  • 2 tbsp olive oil
  • 1 (juiced) lemon
  • 50 g capers
  • 1 tbsp parsley

Method

  1. Pat the swordfish dry and rub it thoroughly with olive oil, then allow it to marinate for 15 minutes at room temperature.
  2. Preheat a grill or grill pan over high heat until it reaches a searing temperature, approximately 230°C (450°F).
  3. Place the swordfish on the hot grill and cook for 20 minutes on the first side without moving it, allowing distinct grill marks to form.
  4. Flip the swordfish carefully and continue grilling for a further 21 minutes until the fish is cooked through and opaque at the center.
  5. While the fish rests, combine the lemon juice, capers, and chopped parsley in a small bowl, stirring to create a bright, briny finishing sauce.
  6. Spoon the caper and lemon sauce generously over the grilled swordfish and serve immediately.
