Ingredients

  • 300 g chicken
  • 2 medium tomato
  • 50 g olives
  • 50 g capers
  • 2 pieces rosemary
  • 2 tbsp white wine

Method

  1. Pat the chicken dry and sear it in a hot pan over medium-high heat for 3-4 minutes per side until golden brown.
  2. Pour in the white wine and let it deglaze the pan, scraping up any browned bits, and allow it to reduce for 2 minutes.
  3. Add the chopped tomatoes and rosemary to the pan, stirring to combine with the chicken.
  4. Fold in the olives and capers, then reduce the heat to medium-low and simmer everything together for 12-13 minutes until the chicken is cooked through and the sauce has thickened.
  5. Remove the rosemary pieces before serving and plate the chicken generously topped with the cacciatora sauce.
