  • 1 tsp fennel seeds
  • 3 cloves garlic
  • 2 pieces rosemary

Method

  1. Preheat the oven to 220°C (425°F) to ensure it reaches the correct temperature before roasting.
  2. Lay the pork belly rolls flat and rub them thoroughly with salt, fennel seeds, and rosemary, pressing the seasonings firmly into the meat.
  3. Add the garlic cloves alongside the seasoned pork belly rolls in a roasting pan, distributing them evenly for aromatic infusion during cooking.
  4. Roll the pork belly tightly and secure with kitchen twine to hold the porchetta shape throughout roasting.
  5. Place the porchetta in the preheated oven and roast at 220°C for 28 minutes until the exterior is golden and the fat is rendered and crispy.
  6. Remove the porchetta from the oven and allow it to rest for 5 minutes before slicing to let the juices redistribute evenly.
