Ingredients
- 200 g shrimp
- 1 tsp madras curry
- 2 medium tomato
- 300 g coconut milk
- 1 (juiced) lemon
Method
- Prepare the shrimp by patting dry with paper towels and set aside while you prepare the remaining ingredients over 23 minutes.
- Heat a heavy-bottomed pan over medium-high heat and toast the madras curry powder for 30 seconds until fragrant, then add the chopped tomatoes and cook for 8 minutes until they begin to break down.
- Pour in the coconut milk and stir well to combine with the tomato and curry mixture, then simmer for 15 minutes to develop the sauce flavors.
- Add the prepared shrimp to the simmering madras sauce and cook for 8 minutes until the shrimp turn opaque and are cooked through.
- Finish the curry by squeezing fresh lemon juice over the dish and stir gently to distribute the bright acidity throughout, then serve immediately.
