Ingredients

  • 200 g shrimp
  • 1 tsp madras curry
  • 2 medium tomato
  • 300 g coconut milk
  • 1 (juiced) lemon

Method

  1. Prepare the shrimp by patting dry with paper towels and set aside while you prepare the remaining ingredients over 23 minutes.
  2. Heat a heavy-bottomed pan over medium-high heat and toast the madras curry powder for 30 seconds until fragrant, then add the chopped tomatoes and cook for 8 minutes until they begin to break down.
  3. Pour in the coconut milk and stir well to combine with the tomato and curry mixture, then simmer for 15 minutes to develop the sauce flavors.
  4. Add the prepared shrimp to the simmering madras sauce and cook for 8 minutes until the shrimp turn opaque and are cooked through.
  5. Finish the curry by squeezing fresh lemon juice over the dish and stir gently to distribute the bright acidity throughout, then serve immediately.
