Ingredients
- 300 g lamb chops
- 60 g yogurt
- 1 tsp tandoori spice
- 1 (juiced) lemon
- 3 cloves garlic
Method
- Combine yogurt, tandoori spice, lemon juice, and minced garlic in a bowl to create the marinade.
- Score the lamb chops with a knife to allow the marinade to penetrate deeply into the meat.
- Coat the lamb chops thoroughly in the marinade, cover, and refrigerate for at least 20 minutes to let the flavors develop.
- Preheat your oven to 220°C (425°F) and place the marinated lamb chops on a wire rack set over a baking tray.
- Roast the lamb chops for 20 minutes, then flip them and continue roasting for a further 22 minutes until charred at the edges and cooked through.
- Rest the lamb chops for 5 minutes before serving to allow the juices to redistribute throughout the meat.
