Ingredients

  • 300 g lamb chops
  • 60 g yogurt
  • 1 tsp tandoori spice
  • 1 (juiced) lemon
  • 3 cloves garlic

Method

  1. Combine yogurt, tandoori spice, lemon juice, and minced garlic in a bowl to create the marinade.
  2. Score the lamb chops with a knife to allow the marinade to penetrate deeply into the meat.
  3. Coat the lamb chops thoroughly in the marinade, cover, and refrigerate for at least 20 minutes to let the flavors develop.
  4. Preheat your oven to 220°C (425°F) and place the marinated lamb chops on a wire rack set over a baking tray.
  5. Roast the lamb chops for 20 minutes, then flip them and continue roasting for a further 22 minutes until charred at the edges and cooked through.
  6. Rest the lamb chops for 5 minutes before serving to allow the juices to redistribute throughout the meat.
